Location: East Grand Forks, MN Description: North Dakota Mill is seeking a skilled and analytical QA & Technical Services Manager with a strong background in technical baking and quality assurance. This position plays a critical role in ensuring product quality from grain receipt through customer processing. The ideal candidate will bridge the gap between laboratory science and real-world baking applications, overseeing all flour quality testing, technical baking services, and sanitation processes while supporting internal and external quality needs. Key Responsibilities: Laboratory & Analytical Functions Oversee flour testing using methods such as Farinograph, Alveograph, Extensograph, Falling Number, and standard protein/moisture/ash analysis. Supervise laboratory staff and maintain proper calibration and functionality of lab equipment. Manage quality requirements and documentation, including manuals and SOPs. Interpret and analyze test data for batch consistency and performance. Technical Baking & Application Evaluation Conduct application bakes (e.g., bread, tortillas, pizza crust) to assess flour functionality. Correlate analytical data to baked product quality (volume, texture, color, tolerance). Provide technical support to R D, production, and customers. Quality Assurance & Food Safety Manage food safety and sanitation processes. Ensure operations comply with safety and regulatory standards (GMP, FSSC, HACCP). Assist in leading quality audits. Manage inbound grain quality standards. Communication & Leadership Report on performance metrics and lab findings. Support customer inquiries and concerns with clear technical data. Mentor and train staff in lab methods and baking evaluations. Continuously monitor industry trends and adjust internal practices accordingly. Significant plant safety responsibilities. Qualifications: Bachelor's degree in food science, Cereal Chemistry, Baking Science, or related field. 5+ years of experience in flour or grain lab testing, including 2+ years of hands-on technical baking or equivalent. Strong knowledge of dough characteristics, baking, and pasta. Excellent leadership, communication, and problem-solving skills. Ability to travel and interface directly with customers and production teams. Preferred Qualifications: Certifications: AIB, ICC, or Cereal Chemist preferred. Experience in a milling or ingredient company environment. Familiarity with customer-facing technical support and/or product development.
