Etz Hayim Holdings, S.P.C d/b/a Lazarus Naturals is looking for an Emulsion Scientist to support the design and development of emulsion technologies for use in infused beverage applications.
Etz Hayim operates the brands Cycling Frog and Lazarus Naturals, as well as a comprehensive operation that spans farming over 300 acres of hemp, extraction, chemical processing, packaging and warehousing to support both brands and private label customers.

Job Overview
We are seeking an experienced Emulsion Scientist to join our product development team, specializing in the design, development, and optimization of emulsion systems for beverage applications. This role requires expertise in both process engineering and formulation science, with a particular focus on creating stable, flavor-neutral emulsions for carbonated beverages and other complex beverage matrices.
Responsibilities and Duties
Design and develop innovative emulsion systems for various beverage applications, with emphasis on a robust stability profile across diverse beverage matrices, scalability, raw material and labor costing, and throughput.
Optimize emulsion formulations to achieve minimal flavor impact while maintaining excellent stability and functionality.
Characterize beverage raw materials and establish acceptance criteria to ensure minimal impact on emulsion stability and strengthen supply chain aspects of beverage production.
Design and optimize emulsification processes including high-pressure homogenization, sonication, and other advanced emulsification techniques
Scale emulsion processes from laboratory to pilot and commercial production scales.
Document bench scale processes and aggregate data for presentation and evaluation by R&D, Production and Senior Leadership teams.
Troubleshoot process-related stability issues and implement corrective solutions.
Establish critical process parameters and develop robust manufacturing protocols
Work cross-functionally with manufacturing teams to ensure consistent emulsion quality and performance.
Conduct comprehensive stability testing including accelerated aging, thermal cycling, and long-term storage studies
Analyze emulsion properties including, but not limited to, high performance liquid chromatography, particle size distribution, various light scattering techniques, and zeta potential
Set data-driven specifications for formulations based on manufacturing and analytical capabilities.
Work closely with beverage development teams to integrate emulsion systems into final product formulations
Support manufacturing operations with technical expertise and troubleshooting, including investigation and resolution of stability failures through systematic root cause analysis
As business needs evolve, realize and initiate process optimization opportunities, creating ways to reduce production affiliated costs - for example, batch size adjustments, increasing cannabinoid concentration within nanoemulsions while improving stability and shelf-life evaluation.
RequirementsBachelor's degree in Chemical Engineering, Food Science, Materials Science, or related field
5-7 years of experience in emulsion science and engineering, preferably in food and beverage applications
Proven track record of developing stable emulsions for beverage systems, particularly carbonated applications
Extensive experience with emulsification equipment including high-pressure homogenizers, microfluidizers, and ultrasonic processors
Proficiency in emulsion characterization techniques such as particle size analysis, microscopy, and rheometry
Strong knowledge of surfactant chemistry and stabilizer functionality
Experience with pH-sensitive and carbonation-stable emulsion systems
Expertise in developing emulsions with minimal flavor impact and sensory neutrality
Strong knowledge of GxP and QMS requirements
Excellent technical writing and verbal communication skills. Experience with patents and IP protections is a plus.
